Bill Kirby, The Maine Lobster Man, is owner and proprieter of Kirby's Lobster Shack. He is a 3rd generation seafarer, following in the footsteps of his father, a commercial fisherman, and his grandfather, a tugboat captain. He is a one-man fishing industry catching lobsters and crabs in his own traps and, with the help of his wife and family, selling them from his lobster shack 4 1/2 miles from the coastal city of Belfast, Maine.

Kirby has been lobstering for 21 years and he has been selling from his own lobster shack for 17 years. His green and white lobster buoys can be seen dotting Maine's coastal waters from Belfast harbor to Sears Island to Islesboro to Bayside. Baiting, setting, and hauling them all with the help of one sternman, Kirby has seen his business grow from a side venture he carried on while working a 9-5 job to a full-time, home-based enterprise complete with his own crabmeat picking crew and his Lobster Shack selling Maine lobsters, clams and crabmeat, now open 7 days a week, from 10:00 a.m. to 6:00 p.m. People travel statewide to buy his Maine lobsters and crabmeat.

Multi-clawed Lobsters

In 1999, Kirby had the distinct pleasure of hauling in two multiclawed lobsters in one trap. His son, Neil, with Jamie Tozier of Kirby's Lobster Shack on Route 7 in Waldo, show off the muliple clawed lobsters that were caught by Kirby in Belfast. Lobster Recipes
Fresh Maine Lobster Stew
- Lobster meat from two 1 1/4 pound cooked Maine Lobsters
(reserve any liquid as you shell out the lobsters) - 1/4 pound real dairy butter
- 1 quart of light cream or half & half
Place butter, about 1/2 cup of reserved lobster liquid, and lobster meat in a 2 1/2 quart saucepan. Turn heat on low. Slowly, bring meat and butter mixture to a low simmer cooking gently for about 3-5 minutes, stirring frequently. Add cream or half & half and heat slowly but do not boil as this will cause your lobster stew to turn sour quickly.
Serve with oyster crackers. Makes about 6 one-cup servings.
This is excellent with fresh Maine crabmeat rolls or lobster rolls and a light garden salad on the side.
